Although I wing everything when I cook, I will do my best to write it down!
You will need: 3-4lb Bottom Round Roast
In Insta Pot: Pour in 2 tbl. Extra Virgin Olive Oil in pot
Set pot to Saute.
Cut up 1 large Onion into chunks and add.
Cook and Stir for 1 minute.
Turn off pot.
(Add sliced Portobello Mushrooms over onions-optional)
Place wire rack on top.
Rub meat with mixture of: Thyme, Seasoned Salt, Raw Salt, Pepper, Rosemary, Onion Powder and Garlic Powder.
Place meat on rack in pot.
Pour in 2 1/2 cups Beef Broth.
Pour in 1 cup red wine.
Wrap small potatoes in foil.
Wrap 1 bag cut frozen carrots & zucchini in foil. (Or cook separately on stove top.)
Place both packs on meat.
Saute for ONE HOUR. (Steam lever on ceiling setting).
After one hour, let set for 15 minutes.
Take out potatoes, carrots & zucchini.
Take out meat and slice into chunks.
Pour in 1 packet French Onion Soup mix
Pour in 1 packet of brown gravy.
Mix in pot with onions.
Cut potatoes in halves and add.
Stir in meat chunks.
Serve carrots and zucchini on side or add to pot.
